Even though it’s the beginning of the week, I really want to treat myself. Sometimes you just crave certain food, for no apparent reason at all; and that’s exactly how I feel today. So I’ve decided to start off my week with a nice sweet treat, because everyone needs a bit of sugar in their lives. My sugar fix for today is this rich, moist and delicious Date Nut Bread. It is essentially a cake loaf, similar to banana loaf/bread; and it’s perfect for any time of the day, that’s why I love it so much. You can toast it for breakfast, or have it with a lovely cup of tea in the evening.
Preparation & Cooking time: 1 hr 40 mins
Serves: 24
Ingredients
- 265g dates, pitted and chopped
- 530mls of boiling water
- 3 tsps baking soda
- 125g chopped walnuts
- 402g white sugar
- 3 tbsps margarine
- 2 eggs, beaten
- 1 tsp salt
- 576g cups all-purpose flour
- 1 tsp vanilla extract
Method
Combine baking soda with the boiling water. Soak the dates in the water and baking soda solution for 30 minutes. Prepare your 9 x 5 inch baking tin, by greasing it with butter or margarine, and then sprinkle some flour over it.
Beat sugar and butter together. Add eggs, vanilla, dates, nuts, flour, and salt
Divide batter equally between the two loaf tins. Bake for 1 hour at . You can use a knife or a cocktail stick and pierce the cake in the centre – if they come out clean then the loaf is done, if not cook for a further few minutes.
Serving
Serve with a beverage of your choice, it particularly goes down well with a fresh cup of tea. You can also slightly toast it in the mornings for breakfast and have it with a side of fruit, cream or vanilla yogurt.
