I am currently in Spain and whilst I am here I want to fully enjoy and experience the Spanish culture, and what better way to do this than by eating authentic Spanish food? ‘When you go to Rome, do as the Romans do’; so whilst I’m here I will ensure that I explore and soak in as much Spanish culture as possible – starting with the food.
First on the list is Paella. Paella is a Spanish dish of; rice, chicken, seafood, and vegetables. It is usually cooked and served in a large shallow pan. Today’s recipe is a slight variation on your typical Paella, because it gives the option of using rice as a pose to risotto.
Preparation 5 minutes | Cooking 10 minutes
Serves: 4
Ingredients
- 1 tbsp vegetable oil
- 1onion, sliced
- 1 garlic clove, chopped
- ½ tsp turmeric
- 600g cooked plain rice or Risotto
- 200g of prawns or chicken (diced or whole)
- 100g frozen peas
- Lemon wedges, to serve
- Salt and pepper to taste
Method
Heat the oil in a frying pan. Tip in the onion and garlic and cook it for a couple of minutes until softened. Stir in turmeric, salt, pepper, followed by the rice, prawns or chicken, peas and finally 150ml of boiling water.
Keep stirring until everything is cooked through and the water has been soaked up.
Serving
Serve this dish hot and with slices of lemon. Enjoy!

It’s NOT fried rice Kanta! FROZEN peas in Spain…..European largest supplier of fresh vegetables?! Which Spain are you in? I think SAFFRON rather than turmeric…….
Fried rice is Chinese with egg etc, you are mixing your cultures!
And STOP it with the BOILED water. Try CHICKEN STOCK. Preferable freshly made at home!

Just because Spain is Europe’s biggest supplier of fresh vegetables does not mean you can not use frozen pees in your paella in Spain, but again I thought Kanta is trying to cater for her Zambian (or non Spanish) audience as well. Folks in Siavonga enjoy both fresh kapenta AND the dried one!
Can I use inshonkonono in place of prawns? After all variety is the spice of life…
Please avoid Frozen ‘Pees’ as you suggest at all costs!
