In The Kitchen With Kanta : Slow Cook Pot Roast

It was a public holiday this week and what better way to enjoy the long weekend, than with a delicious Pot Roast. What I love about this recipe is how easy it is, using a few simple ingredients and a nifty slow cooker you can get a delicious meal for the whole family.

Prep time: 20 mins 
Cook time: 5-6 hours on low setting (or until the meat is tender and the vegetables are cooked through)

Ingredients

  • 900g of Beef roast
  • 450g of Carrots
  • 1 large Onion, chopped
  • 900g of Potatoes
  • 1 tsp Thyme
  • 32 oz Beef stock
  • 2 tsp Garlic
  • Pepper
  • Salt
  • 1 tsp Paprika
  • 1 tbsp Olive oil

Method

Season the beef with salt, pepper, paprika and garlic. Heat the olive oil on a high heat and brown the beef on all sides in a large pan, about 4 minutes per side.

Place the beef in the slow cooker and add, the beef stock, carrots, onions, potatoes, thyme and extra salt and pepper to taste.

Cover and cook on Low setting for 8 to 10 hours.

Serving

Serve hot, and enjoy with a beverage of your choice.

  1. 8 Hours of slow cooking? Who can afford the energy bill? Feeds How many, Kanta? Does it work for Pork and Lamb?

    • I know this is a cookery column, but why do you always want to be spoon-fed? Use your imagination and figure out what quantity will be enough for YOUR family. Also, you can try ‘amalasha’ if you think 8 hours using ‘ZEGA’ is too much.
      You last question is genuine…

    Now I want to sell for anyone who will come up with Lusaka Cooking!

    • Don’t lie. You don’t deserve any payment, you are always pouring ‘cold water’ on Kanta’s cooking and not promoting it.

      Last time I suggested you come up with your own show. I will repeat, come up with ‘Lusaka Cooking with Master Chef Nostra’. Also, warn your audience that you will always feature ‘Slow cook burnt food…’

    • NEZ, this a blog on cooking. When habe Zambians been rich? you make it sound like poverty in Zambia is a new thing. The only time Zambians have lived decently, relatively speaking was in the early 70s.

  4. I usually do my beef roast with ordinary cooking oil, seasoned with salt, ‘browned’ in an ordinary deep casserole (glass lid), drop in a garlic clove and chopped onion, and continue to add bit of water until it is soft. Will cook for about 2.5 – 3 hours only on low heat…
    Served hot with my favourite roller meal from pa Chigayo and some veggies…

    Ha Ha,
    Need to size the portion according to the number of mouths to be fed . BTW yours is the poor man’s pot roast – only 3Hrs cooking time with saladi and water. BTW, Kanta didn’t mention any water for her pot roast?

    • @Ba Folosho, poor man’s pot roast rocks! That’s how we were brought up (the meat will be a table-banging tender!). Actually garlic and onion were even luxury.
      Kanta used beef stock…

  6. It’s fair to point out, Slow a Cookers are very cost effective, in that they use the power wattage of a light bulb to cook. So in fact it’s advisable to use slow cookers overnight than say the conventional Oven which is power/ gas hungry.

    • You wake up its good and ready for your meals of the day. Check the timing for the potatoes, 8 hours might be too long for small baby potatoes.
