A Frittata is an egg-based Italian dish similar to an omelette and a crust less quiche. It usually has additional ingredients such as meats, cheeses and vegetables. It is a really simple and easy dish, that’s filling and full of flavour. Perfect for Breakfast lunch or dinner; it makes a satisfying meal and is a great way to use up leftover veggies.
Preparation 5 – 15 mins | Cooking 30 mins
Ingredients
- 2 spring onions, chopped
- 4 tablespoons of frozen peas, defrosted
- 1courgette, halved with the ends cut off
- 1 handful of broccoli, chopped (optional)
- 2 slices of ham
- 100g cheddar cheese
- 4 eggs
Method
Switch the oven on to 180 degrees C
Cut up the spring onions, broccoli and ham; grate the courgette and cheese – add them, and the peas into a bowl. Then crack the eggs into a separate bowl. Whisk the eggs until they are mixed completely.
Pour the eggs into the bowl with all your other ingredients in it, and stir well. Brush a round ovenproof dish, about 16cm across, with oil. Tip everything into the dish evenly, put the dish into the oven and cook for 30 minutes or until the egg is set.
Serving
Garnish with some freshly chopped coriander; and serve with salad or crusty bread.

why are you feeding us thiese white recipes. White people and black people are different. We cant eat the same food. We are children of the sun and they are ice age creatures. if we eat their food, we will get sick mentally like them. isnt it the reason why people today are now suffering from strange white people diseases like autism in such unprecendented rates? its the food. Llaila Afrika does a good job on diet. what and what not to eat. Please do some research on the diet that you showing us. Afrika first in everything. Food, clothes, driink, culture, spirituality. please my sister do african diets. i can help if you want someback ground research on afrikan foods.
I dont know why our people crave for such foods which is simply not good for your health, your mind and your soul…as the saying goes you are what you eat.
Skip the Cheese Kanta. Try and adjust your recipes to Zambian food and diet. A frittata doesn’t NEED to have cheese in it. Just WHY, Broccoli and courgette? It would work with local veggies. I’d use pumpkin leaves, cooked down drained to remove excess water, and the sautéed with onions (not spring onions) in a little oil. Keep the peas. I’d use thinly cut lean meat, (or diced chicken), both sautéed in a little oil. After my veg and chosen meat are cooled down, prepped and ready to assemble then add the eggs and cook according to your recipe.
One can add small well diced potatoes also pre prepped by sauté as well. A bit Spanish.
