Serves: 4 people
Ingredients
- 1 tbsp olive oil
- 2 chicken breasts or thighs (skin on or off), chopped
- 1onion, diced
- 1 red pepper, thinly sliced
- 2 garlic cloves, crushed
- 75g sausage, sliced
- 1 tbsp Cajun seasoning, or mixed spice seasoning
- 250g long grain rice
- 400g can plum tomato
- 350ml chicken stock
Method
Heat the oil in a large frying pan. Brown the chicken for 5-8 mins until it is golden, remove it and set aside. Tip in the onions and cook for 3-4 mins until soft; now add the pepper, garlic, sausage and seasoning; and cook for 5 mins more.
Now stir the chicken back into the mixture and add the rice, the tomatoes and stock; cover and simmer for 20-25 mins until the rice is tender.
Serving
Serve hot, with a beverage of your choice.

Very nice. Recommend you use a spicy sausage (like chorizo)to add flavour not just ordinary sausages. Warning…the fat content in sausages is foreboding, might be better to just rub the olive oil, around the pan and brown both chicken and sausage over a low heat.
Actually, I suppose you can also use those spicy dried South African sausages!
