In The Kitchen With Kanta : No – Bake Lemon Cheesecake

I love a good dessert, and today I decided to share this recipe with you. Cheesecake is one of my favorites and it’s perfect for any occasion. This easy no bake cheesecake is great, and only takes an hour to prepare, leave it in the freezer to chill overnight and it will be perfect for your guests the next day.

Preparation 1 hour | Chilling time 8 hours

Serves: 7



  • 400g digestive biscuits
  • 125g butter or margarine


  • 200g Philadelphia cheese (or other cream cheese)
  • 150ml cream
  • 75g caster sugar
  • 2 lemons, juiced


Put the biscuits in food processor and blend into fine pieces. Or place them in a freezer bag, seal it, and using a rolling pin, crush the biscuits to fine crumbs. Add butter and mix together. Put the biscuit mixture in a round baking tin, and use a tablespoon to flatten and smoothen the biscuit mixture – leave it to set.

Mix the cheese and cream until stiff peaks occur. Add sugar and lemon juice and beat together until smooth.

Place the topping in the tin over the biscuit base and let it set overnight in the refrigerator.


Serve for dessert, with a hot cup tea or a beverage of your choice.
