This week I decided to share another one of my recipes from my TV show “Kanta’s Kitchen”; which airs on Zambezi Magic, DStv channel 160.  This Southern Fried Chicken recipe is delicious and very easy to follow.  I have always loved Southern Fried Chicken; and I love it even more now that I can make it at home.  So if you haven’t already seen this recipe from my show, here it is for you to try out.

Prep 15 mins | Cook 20 mins

Serves: 2

For the coleslaw

  • 2 Carrots
  • ½ a Red cabbage
  • 2 tsps Vinegar
  • 2 tsps Sugar
  • 2 tbsps Mayonnaise
  • ½ Red onions

For the Chicken

  • 4 Chicken legs
  • 2 Eggs
  • Paprika
  • Salt
  • Flour

Method

Season the chicken with salt, pepper and paprika.  Mix well making sure every piece of chicken is well marinated.

Break the eggs into a bowl and whisk them.  Roll each piece of chicken into the egg followed by the flour, making sure each piece is fully coated.  For a thicker coating, roll each piece of chicken in the egg and flour again.

Heat the oil, on a medium – high heat.  Make sure it is hot enough to fry, by adding a piece of bread to it, if it sizzles then the oil is ready.  Gently add each piece of chicken into the pan, cook the chicken on both sides, until golden brown and cooked through.  When cooked there should be no pink colour left inside the chicken, and it should be 75 degrees C in the centre.

Remove the chicken from the frying pan and allow it to drain. Whilst the chicken drains grate your cabbage, and carrots, add some of your chopped onions, add mayonnaise, vinegar and sugar; and mix well.  If you want your coleslaw to be a bit sweeter add a bit more sugar, but always make sure you add equal amounts of vinegar and sugar.

Serving

Plate up your food and serve with some nice chunky chips.  Season, with some extra salt and pepper and enjoy.

Before you talk about hygiene, look hygienic yourself. Before you talk about slimming show me your body

This lady cooks but there is a lot more proteins and I dont liker her random food , I am afraid.

Could we have a section on training, abs, how to lose weight instead. That is more healthy than the picture of that oiled chicken.

No wonder people die young there

      Thanks

    • I’m not a doctor but I’ll tell you that the warning is exaggerated especially considering that fried food is not a staple of the Zambian diet. The majority will quickly get fed up of eating chicken & chips everyday.

Also, it depends on the type of oil used for frying. Unhealthy artificial oils contain toxic substances that are more reason to fret than the food itself. This is the only major risk in consuming fried food and that it robs food of it’s natural nutritional value compared to cooking or barbecue (which most Zambians prefer anyway.)

  1. Kanta lets promote healthy eating…this is junk food.
I think Kanta is spreading herself too thin and overworked…LT you should invite other chefs as well.

  2. In any kitchen, a professional chef wears a hair net and has their hair in a ponytail or preferably a hair bum so hair does not end up in peoples food. Otherwise great presentation.
