A little taste of home.

The combination of nshima and relish seems to be the only thing that most Zambians call a real meal.

So to satisfy your palettes, today I want to share a recipe for a meal that I have eaten all my life.  It is a traditional meal, which I am sure all of the Zambians will be familiar with.  Every household does things slightly differently but this is a recipe past down from my mother, one of the best cooks I know.  Yes!! Believe it or not we Zambians in the diaspora do eat nshima.

Growing up I hated nshima, we ate it too often and I actually stopped eating it for years.  However in the last few years I have started enjoying it again and have come to appreciate it; not only because it brings back fond memories of me eating it with my great grandmother; but because it is very cost effective and has a high nutritional value.

Often time’s nshima is eaten with two side dishes also known as “relish” which tend to be vegetables and fish, chicken or meat.  It offers a full balanced meal; covering your carbohydrates, vegetables, protein and fat.   Known as Nshima in Zambia, Sadza in Zimbabwe and Pap in South Africa; nshima is commonly eaten across Africa, and is the staple food in many African countries.

I don’t think you can ever run away from nshima; it’s one of those foods that you are given at every relative’s house and is a huge part of Zambian culture.  So if any non-Zambians are curious enough to try this meal, then follow the recipe below, and enjoy.

Now, this recipe might be a bit tricky for any first timers; because when I cook nshima I don’t use measurements, in fact most people that I know don’t use measurements for this.  However, I will try and give as much detail as possible to guide you through this; but if you want exact measurements, just type in “how to cook nshima” on Google and you will get a step by step guide.

Preparation and Cooking time 2 ½ hours

Serves minimum 4 people

For this recipe I am using organic pumpkin leaves from the garden.  You can’t go wrong with organic vegetables; much healthier.

Ingredients.

Beans (for those in the diaspora, Kidney beans work just as well)

Organic Pumpkin leaves

About 1 cup of ground nuts

Rib meat

2 large onions chopped

1medium – large fresh tomato chopped

1 tin of tomato

1 pack of maize meal or mealie meal

1 pack of cassava meal (optional)

Salt

Method

Soak the beans overnight, the night before cooking.

In a pot boil beans for 1 hour.  In a separate pan, fry onion and ½ a tin of tomato with a pinch of salt.  Once the beans have softened and nearly all the water is gone; add the onion and tomato, allow to simmer and thicken.

Clean the pumpkin leaves by flicking them to remove any dust. Then hold the stem in one hand and strip the outer fibres down to the leaves. Wash and chop the leaves into small pieces ready for cooking.  Boil water separately and add a pinch or two of salt; add leaves to the water, cover the pot and leave to cook until they have wilted.

Whilst leaves cook, pound ground nuts to a powdery consistency and sieve.  Now that the leaves have reduced to half, add pounded ground nuts, onions and fresh tomato, mix well.  Cover the pot slightly and cook for 1 hour.  You will know the ground nuts are cooked, because they will change from a white powdery colour to a brown colour.  Don’t let all the water evaporate, this veg should not be too dry.

When cooking rib meat of a cow, you do not need to add oil because it already has quite a bit of fat on it. Simply fill a pot with water, until the meat is fully submerged and boil. Once water evaporates, fry the meat add a bit of salt, pepper, onion and ½ a tin of tomato.  Add a bit of water to make the stew and leave to simmer and thicken, adding water accordingly.

Finally cook your nshima.  Put the stove on high heat, in a large pot add a cup of maize meal/mealie meal to two cups of cold water to make porridge.  Now add a lot of boiling water to fill the pot about ½ – ¾ full.  Reduce the heat to medium, cover the pot and leave to cook for 3-5 minutes.  Now using a flat wooden spoon stir vigorously to make it smooth; gradually add a tbsp at a time of maize meal/mealie meal to thicken the nshima, always making sure you stir continuously and vigorously, to remove lumps, (this is quite a workout especially if cooking for a large number of people).  To make sure that the maize meal is cooked, cook for about 20 minutes. Finally add cassava meal and mix vigorously once more, until thick enough to eat with your hands and there is no water remaining.  It should be about the consistency of soft Play-Doh but stickier.  Cover the pot and leave to stand for a few minutes.

Serving

Wet a serving spoon, scoop out the nshima in fist-sized lumps and enjoy with your relish. Serve hot, and use your hands to eat.  Enjoy!!

Fight between Driver and Female Passenger allegedly caused truck accident

A TRUCK with registration number FJL 343 FS carrying several boxes of cooking oil from Johannesburg in South Africa to Ndola overturned in Kazungula on Sunday after a male driver Jordan Banda and unknown female passenger picked up a quarrel while the vehicle was in motion.

Mr Banda however denied fighting with a female passenger although the eyewitnesses insisted that they saw two people fighting inside as the truck was moving.

Several residents rushed to the scene to loot the cooking oil but a quick action from Kazungula Police and Kazungula District Commissioner Pascalina Musokotwane restrained them.

George Kakoma who witnessed the accident, said he was driving near the truck in question when he saw the driver and a female passenger fighting after which the truck flipped and threw the cooking oil to the ground.

Mr Kalomo said it was unfortunate that the driver could engage in a fight with another person while the truck was moving.

“This accident was caused after the two had an argument. When they started fighting, the female passenger held the steering after which the truck went off the road.

“The lady then came to my car and asked for help to be taken to the police as she feared to be beaten again,” Mr Kakoma said.

And Ms Musokotwane, who was found at the scene, said the truck failed to negotiate a curve and flipped after which the boxes of cooking oil were thrown into the nearby bush.

Ms Musokotwane urged residents to avoid looting products from a misfortune situation.

Mr Banda later worked with the police and Ms Musokotwane to recruit the same residents to load the cooking oil into the truck after which he gave them some bottles of cooking oil.

First lady Esther Lungu says she is in the process of forming an organisation to spearhead her outreach programmes.

Mrs Lungu says the formation of the organisation will provide transparent transactions of her works.

She says she saw it prudent to come up with an association in order to make her work easier and transparent.

The First lady was speaking at State House on Monday when she received a donation from Waneta Empowerment, a non-governmental organisation spearheading the cause of women.

And Waneta Empowerment Chairperson Pastor Francine Malembeka is hopeful the donated items will go a long way in alleviating the suffering of rural mothers.

Pastor Malembeka said her organisation is ready to partner with the first lady to reach out to vulnerable women.

And MK Publishers Chief Editor Agness Nyendwa says the donated books are a gift for the underprivileged children in the country.

Zambia and Botswana Ministers chide Contractor for slow progress on Kazungula Bridge

ZAMBIAN Minister for Transport, Works, Supply and Communications Yamfwa Mukanga and Botswana Minister for Transport and Communications Tshenolo Mabeo have chided the contractor for Kazungula Bridge project on the slow progress made to construct the facility.

The two Ministers, who inspected the Bridge on Sunday afternoon, said people from the two countries would not want to be given excuses but that the infrastructure should be delivered on time.

Mr Mukanga asked the contractor to increase on labour and work hours to catch up with the project timeframe.

“Why should we have many catch up plans and now you have given us a catch up plan number five?

“Next time you will give us catch up plan number six and we are losing time! We are wasting time and we need to complete by 2018 as planned. We can not afford waiting while the contractor is doing his own programme,” Mr Mukanga said.

He said the two Governments expected progress and commitment and not catch up plans.

Mr Mabeo said the two countries wanted assurance that the project would finish on time as planned.

He said he was not convinced that the Bridge would be delivered on time.

“Whatever we are doing behind curtains as experts, people are looking for the Bridge. Can you do the work. This is a reputable project. Let’s work,” Mr Mabeo said.

Project Team leader Kobamelo Kgoboko said the contractor had proposed that he would catch up with the original plan by July 2016.

Mr Kgoboko said the contractor needed to work on both sides of the Bridge during the construction of the temporary bridge but had challenges currently.

In response, the contractor and project manager William Kim assured the two Ministers that the project would be delivered by 2018 as planned without compromising with quality and safety.

In September last year, Zambia’s former Vice President Guy Scott and Botswana Vice President Ponatshego Kedikilwe officiated at the ground breaking ceremony for the construction of Kazungula Bridge.

Zambia and Botswana signed a contract with Daewoo Engineering and Construction for the construction of a road and rail Bridge across the Zambezi to at Kazungula Border.

The 923 meters long Bridge is expected to create about 2, 000 jobs in both countries during the construction period. It would be located at the confluence of Zambezi and Chobe Rivers about 65 kilometres upstream of the ‘mighty’ Victoria Falls.

The Bridge, which would be completed by 2018, will be financed by the Governments of Zambia and Botswana with financial assistance from the Japan International Cooperation Agency (JICA) and the African Development Bank (AfDB).

ECZ targets 6.8 million registered voters for next year’s polls

THE Electoral Commission of Zambia (ECZ) has launched the voter registration exercise and has targeted to register 1.7 million new voters ahead of next year’s tripartite elections.

ECZ chairperson Esau Chulu said this will bring the number of registered voters to 6.8 million voters.

Justice Chulu said this in Lusaka yesterday after he launched the exercise and registered as a voter at Roma Girls’ Secondary School.

“This is a nationwide exercise which has started in designated centres in all districts country-wide,” Justice Chulu said.
He said the exercise is scheduled to go on until November 11, this year.

Justice Chulu said officers will spend 14 days at all the centres that have opened after which they will move to the next set of centres for another 14 days until all the registration centres are covered.

“The exercise will also be carried out at all district council offices from September 14 to March 31, next year,” he said.

Justice Chulu said ECZ has provided for any person who will turn 18 years before or on July 31 next year to be allowed to register as a voter as a way of capturing many people.

“Lost cards will also be replaced but a police report will be required and we have since asked for a waiver of fees for a police report in this regard,” Justice Chulu said.

Justice Chulu said the transfer of voters from one polling station to another will also be done as well as the removal from the system of those who have died.

He said ECZ is hopeful that more people will vote in next year’s elections considering the fact that the picture has not been very encouraging because the voter percent has been dropping from 70 percent in 2006 to 43 percent in January this year.

“I am calling upon everybody to come forward and register so that we can have a brighter picture for next year’s general elections,” Justice Chulu said.

And Justice Chulu said the ballot papers for Solwezi West and Lubansenshi constituencies arrived in the country on Sunday and are ready for inspection.

Kambwili threaten to terminate UPND Member Syakalima’s UNZA Lecturing contract

GOVERNMENT has admonished United Party for National Development (UPND) presidential advisor Douglas Syakalima over his continued disparaging remarks against President Edgar Lungu and the Patriotic Front (PF) administration.

Chief Government spokesperson Chishimba Kambwili said in a statement issued in Lusaka yesterday that Mr Syakalima had continued disparaging the Presidency on flimsy grounds such as information contained in a story attributed to him in yesterday’s edition of the Post newspaper.

Mr Kambwili said as a former Member of Parliament (MP) who served in various Committees of the House, Mr Syakalima was in a better position to understand the etiquette of MP’s hence the Government’s concern over his disrespect towards the President.

“One expects Mr Syakalima to be respectful, decent and honourable in commenting on national issues, the Presidency, in particular.

“It is therefore, unacceptable and unbecoming of Mr Syakalima, a former legislator, to callously issue disparaging remarks against the Head of State for no plausible reason,” Mr Kambwili who is also Information and Broadcasting Services Minister said.

He said Mr Syakalima’s morbid hatred for President Lungu would not help him politically but may just serve to destroy the moral fibre of the country as young people were meant to think that insulting a Head of State was normal.

Mr Kambwili said as a lecturer at one of the country’s high institutions of learning, the University of Zambia (UNZA),Mr Syakalima was expected to inculcate good morals in the youth particularly students.

The Minister said partisan politicking as being practised by Mr Syakalima was not allowed in institutions of learning because it only served to negatively influence students and disrupt their concentration on studies.

He threatened that Government would be left with no option than to recommend the termination of Mr Syakalima’s contract as he had continued to engage in partisan politics.

“Government, therefore, wonders whether politically charged lecturers like Mr Syakalima should continue serving in the University or indeed other institutions of higher learning.

“If Mr Syakalima continues with his conduct, Government will be left with no option but recommend the termination of his contract,” Mr Kambwili said.

This year, Mr Syakalima has made headlines in the Post Newsaper against President Lungu.

Yesterday, the Post Newspaper quoted him as saying that Zambia has a lazy President whose success only shows in tailor-made suits. In August, Mr Syakalima was again quoted saying that said President Lungu also needed a lot of rest, and not alcohol, because of his health condition.

“Because of his physical health, he easily becomes fatigued without doing anything. But when he is fatigued like that, he goes on beer. He has an alcohol problem,” he said. Syakalima said there was also need for the Head of State to start going to the gym so that alcohol could be removed from his system.

PATRIOTIC Front (PF) deputy secretary-general Mumbi Phiri has called on founder members who left in anger during wrangles after President Michael Sata’s death to re-join the party.

Ms Phiri said in Kitwe that the PF leadership is ready to welcome all members who have joined various opposition political parties.

She said no political party can meet the people’s aspirations apart from the ruling PF, which she said has stuck to its ideals of serving the poor through the implementation of pro-poor policies.

“Those who left the party in anger should come back. They should not continue wasting time in small opposition parties that do not have any future. Let’s be united. Politics is about numbers,” Ms Phiri said.

She said sanity has returned to the PF after the departure of some people who were causing confusion because of their ‘insatiable appetite to usurp power from Mr Sata’.

Ms Phiri also received defectors from various opposition political parties.

She attacked some opposition party members for allegedly exploiting small-scale farmers by buying maize at K50 per 50-kilogramme bag.

“People who claim to be rich were buying maize at K50 per 50-kg but Government, which cares for farmers, is buying at K75 per bag. Such people should not be taken seriously,” she said.

Former MMD members Joel Malanji and Prince Mushili, who recently joined the PF, said they are happy to be part of an all-inclusive party.

PF member of the central committee Elizabeth Phiri urged youths that have just acquired national registration cards to register as voters.

The voter registration exercise will run from September 11 to November 11.

PF Copperbelt Province chairperson Stephen Kainga and youth chairperson Nathan Chanda said the region is ready for the 2016 general elections and solidly behind President Lungu.

FRA to construct 98 storage sheds across the country

THE Food Reserve Agency (FRA) will construct 98 storage sheds across the country at cost of US$73 million to ensure maize bought by the agency does not go to waste.

Speaking when he paid a courtesy call on Lundazi acting district commissioner Muvule Banda here yesterday, FRA executive director Chola Kafwabulula said the construction of the 98 storage sheds will further reduce crop wastage.

Mr Kafwabulula said FRA has managed to reduce crop wastage in areas where storage facilities have been built to at least one percent.

“These interventions will help to reduce crop wastage. We intend to start construction by December this year,” he said.

Mr Kafwabulula said the contractor initially abandoned the construction of the 98 sheds at slab level but that FRA has signed a contract with another firm to complete the work.

He said an American company called Advance Africa has been awarded the contract to build the sheds.

“Unfortunately the contractor who was hired to build the sheds abandoned the works at slab level. But now these sheds will be built across the country by another company,” he said.

Mr Kafwabulula said 27 sheds will be built in Eastern Province, each with a capacity of 5,000 metric tonnes and that two of the structures will be built in Lundazi.

“This development is part of the FRA’s 2014-2018 investment plan which will see the construction of storage facilities,” Mr Kafwabulula said.

And in July Mr Syakalima was quoted saying that President Edgar Lungu must be having enough rest and cut down on drinking alcohol because he has embarrassed the nation by dozing on duty.

THE failure by previous Governments to invest in the energy sector should not be blamed on President Edgar Lungu because he is a victim of circumstances, Chief Government spokesperson Chishimba Kambwili has said.

Mr Kambwili said if previous Governments had invested heavily in the energy sector including emergencies, the country would not be experiencing the effects of the power deficit.

Mr Kambwili has since challenged the opposition political parties in the habit of
criticising Government over the power deficit to offer viable solutions that would help to cushion the situation rather than taking a confrontation stance all the time.

” All those opposition political parties have no solutions to the power deficit, they must sympathise with us and stop blaming Mr Lungu, let me remind you that, the President is a victim of poor planning by past governments because they failed to invest in energy,” Mr Kambwili said.

Speaking on ZNBC’s Sunday interview, the Information and Broadcasting Services Minister said President Lungu would however make major pronouncements this week during the official opening of fifth session of the eleventh National Assembly.

He said his government had consulted widely over the issue saying currently people should not panic because soon the situation would be normalised.

Mr Kambwili said the country had performed well in attracting foreign investors from the time Patriotic Front (PF) took over Government and warned the media to be responsible in their reporting.

” Certain reporting really scares investors, don’t know what you are getting out of it but just know that each time you become irresponsible, you are punishing the poor Zambians who needed that investor to come and create jobs for them,” he said.

He castigated those saying the government had failed and yet they were part of the system and he viewed such people as cowards for their failure to speak out the wrongs in government which they once served.

ZEMA breathes fire on KCM over Chile Copper concentrates

The Zambia Environmental Management Agency has directed Konkola Copper Mines to stop any plans to process the copper concentrates it imported from Chile which contains high levels of Arsenic.

ZEMA Spokesman Ireen Chipili said KCM must submit to ZEMA, the full programme for exporting the said material to Chile or other disposal and smelting facilities outside Zambia by September 18th 2015.

Mrs Chipili said KCM must export the said copper concentrates to Chile or to other disposal and smelting facilities outside Zambia by 15th October 2015.

She said the environmental watchdog also wants the full report on the export submitted to it and the Ministry of Lands, Natural Resources and Environmental Protection by November 15th 2015.

“ZEMA takes this opportunity to remind all licensed facilities to adhere to the conditions stipulated by environmental law and any other relevant laws and uphold environmental friendly practices,” Mrs Chipili said.

She added, “ZEMA wishes to reiterate that it is a requirement of the law from all development projects to go through the Environmental Impact Assessment process and to adhere fully to the conditions of approval were a project is approved. It is an offence to conduct business activities contrary to the provisions of the Environmental Management Act No. 12 2011.”

Meanwhile, Konkola Copper Mines has confirmed receiving a letter from the ZEMA advising the company to re-export the Chilean copper concentrates KCM imported in the second quarter of 2015.

KCM Public Relations and Communications Manager Shapi Shachinda said the firm will fully comply with the advice by ZEMA and is currently working on logistics to take the concentrate out of the country.

Modern Stars slide at oily Indeni

Promotion chasing Kalulushi Modern Stars have again surrendered the FAZ Division One North top spot to Lumwana Radiants after losing their respective Week 27 match at Indeni on Saturday.

Kalulushi now drops into second place with 52 points, one point behind new leaders Lumwana.

Striker Akakulubelwa Mwachiyaba scored a seventh minute lone goal as Indeni condemned Kalulushi to their seventh defeat of the season.

Despite this 1-0 defeat at Indeni, Kalulushi remain on course to bouncing back to the Super Division having so far posted 16 wins, four draws and seven defeats.

On the other hand, Lumwana returned to the top slot after thumping relegation candidates Konkola Mine Police 3-0 in Solwezi on Sunday.

Forward Lembani Lungu engineered the victory with a hat-trick in this game played at Lumwana Grounds.

Lungu opened the scoring in the first half before scoring twice in the last half as Allan Kamwanga’s boys improved their chances of winning promotion to the Super Division.

Mine shutdowns threaten Zambia’s growth-Moody’s

Rating agency Moody’s says the suspension of operations at Glencore’s Mopani mine and at the Chinese-operated Luanshya mine will depress growth and reduce proceeds from exports and royalties.

In a research report released today, Moody’s says reduced copper production will put further pressure on the country’s fiscal and external positions.
 
Moody’s Vice President Senior Analyst Zuzana Brixiova said the suspension of some mining operations now introduces downside risk to the government’s revised growth projections.

Ms. Zuzana Brixiova said Zambia’s growth prospects already face challenges from subdued global copper demand, depressed copper prices which she said Moody’s expects to persist and drought-induced electricity shortages.
 
“Zambia’s growth which has averaged more than 7% per year over the past decade — is now at risk of falling to the Sub-Saharan Africa median, Moody’s estimates that next year’s fiscal deficit will widen by additional 0.75-1.00 percentage points of GDP owing to the reduced copper tax base alone,” She said.

“Lower growth and tax revenues will negatively pressure the government’s already rising budget deficit and debt levels, continuing a trend of missed fiscal targets that were among factors behind our 29 May decision to assign a negative outlook,” Ms. Brixiova said.

She said reduced export proceeds will exacerbate the trade deficits that have emerged in recent months further widening the current account deficit beyond the projected 3% of GDP for 2015, and add to the forces driving the recent rapid depreciation of currency.

“During the past five months, the kwacha has depreciated by 30% against the US dollar, more than any other currency in the region,” Mrs Ms. Brixiova said.

Last Monday, Glencore International AG announced that it would suspend operations at its Mopani Copper Mine in Zambia for 18 months.

Glencore’s suspension follows a recent decision by China’s Luanshya to place the mine on care and maintenance.

Lusaka Magistrate Arida Chulu has found Former Game stores Manager, Maduramuthoo Palan with a case to answer.

This is in a matter where Palan is accused of having sexually harassed a Former Game Stores employee Mwila Mukamuluti.

Speaking when she delivered the ruling , Magistrate Chulu said that she has decided to put Mr Palan on his defence because the State had made its case.

She then ordered that Mr Palan must be informed on defending himself because it is his right .

Palan through his Lawyer Lubinda Linyama informed the court that he will bring one or two witnesses.

The Matter has since been adjourned to October 27th, 2015 .
