In The Kitchen With Kanta: Spicy Village chicken

The other day I was speaking to a friend that is from Rwanda, and we were talking about different types of African food.  He mentioned the contrasting ways that Eastern Africans and Zambians prepare village chicken; and I found this very interesting.  Now, I’ve got to admit that the first time I ever tried village chicken it wasn’t cooked very well; so it was really tough and I didn’t enjoy it at all.  I would say that village chicken is an acquired taste and it takes some time to adjust to.  However, when it is cooked correctly it is absolutely delicious, and I’ve got to admit there is something nice about knowing that you are eating something that’s healthy and not pumped full of chemicals.

So what is village chicken? It is chicken that is not fed on “special” chicken feed like broiler chicken. A village chicken wonders about freely, like Free Range chicken – it is not confined to the chicken run or a small space.

Preparation time: 10 minutes

Cooking time: 1-2 hours

Serves 5-6 people

Ingredients

  • 1kg of (Village) Chicken
  • 2 big tomatoes
  • 1 medium onion
  • 2 tbsps of vegetable oil (or your preferred cooking oil)
  • Salt to taste
  • 200mls water
  • 2 tsps of tomato paste
  • 1 tsp curry powder
  • ½ a tsp of chilli flakes/ or ½ a red chilli, chopped  (optional)
  • 1 tsp of garlic powder
  • 1 handful of fresh thyme, removed from the stalks and roughly chopped (optional) 

Method

On a high heat boil a medium – large pot of water.  Don’t add salt before the chicken is cooked because this will harden the meat. Cut the chicken into pieces at the joints; place the pieces into the pot and bring to the boil.  Turn the chicken after 20 minutes and continue boiling.

Cover the pot and allow the chicken to boil completely.  Once the chicken is cooked, add the oil and cook for 10 minutes.
Chop the onions and tomatoes, add them to the chicken and stir gently to allow the ingredients to mix thoroughly.  Add your tomato paste and spices; salt, curry powder, chilli to taste and garlic powder and allow everything to blend and cook.

Serving

Remove from the heat and serve with vegetables (rape, pumpkin leaves or any other vegetable) and Nshima or rice.

This chicken can also be cooked without any spices if preferred, because village chicken does have some natural flavour.

F Jay ,the self proclaimed “ King of Zambian Rnb” ,was born Fumbani Louis changaya Juniour, on 27th July 1988 in Lusaka, Zambia. He is a producer , singer and song writer who started his music career with a group called street fame. The group consisted of 4 members and specialized in rapping dancing and singing. They participated and sometimes hosted a number of dance battles and hip hop events where they showed talent and invited others to do the same. Street fame had a breakout hit called ‘Chimodzi chili bad’ that became part of rotation on most Zambian radio stations. In college he met several other musicians. He organized a microphone and mixer so they could work together on songs during free time. It was here that F jay began to explore his singing skills. He did a valentine song that drove all the women who heard it crazy, a singer was born.

The ‘college studio’ was also joined by Marvel, a rapper who was already signed to So Good Entertainment. Marvel took notice to what guys were doing and after featuring on a few songs he took some of the material to his label bosses. They were quite impressed and it wasn’t long before F Jay became a part of the So Good family. He released a couple of hot solo projects including his breakthrough Hit Single Official Love. He Took advantage of the lack of pure Rnb Songs in the country and dubbed himself ‘King of Rnb’. He continued to wow his audiences. His peers in the industry have taken notice as he continues to be featured on big name projects which include Chef 187, Zone Fam, Pilato and Macky 2. His ability to adapt to different styles and vocal versatility continues to raise him in the industry as he continues to blend into different genres and sounds. Currently 1/3 and Lead Vocalist of afro beat Trio Urban Hype. Mr changaya is surely The King Of Rnb and is here to stay.

FODEP calls for the appointment of constitutional court judges

FODEP Executive Director McDonald Chipenzi has called on Republican President Edgar Lungu to operationalize articles 103,104 and 105 of the amended constitution and establish the constitutional court.

Speaking in an interview Mr Chipenzi said there is need to appoint judges of the constitutional court as the court will play an important role in the August,11 elections.

He said the President needs to appoint the judges so that they can be scrutinized by the public and avoid being accused of appointing his relatives who would protect him if the constitutional court could be needed in case there is a dispute after the polls.

“The President should concentrate on making and promoting a smooth electoral process ahead of August, 11, general elections and one of those is the operationalization of articles 103, 104 and 105 which talks about the establishment of a constitutional court.

“The constitutional court is the only institution which can respond to any electoral Disputes at Presidential level hence the President should stop concentrating on the appointments of Permanent Secretaries and start appointing constitutional court judges. We are 6 months away from the elections and government seem not to be moving forward in terms of establishing the constitutional court,” he said.

He added ” the President should now concentrate on identifying and scrutinizing the judges who will be appointed because they will be key players in the forth coming elections. Our appeal to the President is let’s us have movements towards the constitution of the constitutional court. “

MLC goes to court over biased coverage by public media

Media Liaison Committee chairperson Enock Ngoma says lawyers engaged to seek legal redress against the biased media coverage by state run ZNBC, Times of Zambia and Zambia Daily Mail will on Wednesday submit the petition to the high court.

The committee is seeking the courts intervention and is hopeful that the national broadcaster and the sister companies will stop the biased coverage of political parties and other stakeholders.

Mr Ngoma said the committee is hopeful that the courts will compel the 3 public institutions to start giving equal coverage to all political players as the institutions are not private but public hence should give coverage to all Zambians.

He said the committee has engaged lawyers who are pursuing the issue and are expected to submit documents in the High court on Wednesday.

He said the committee was forced to take court action against the three public media institutions because of the continued biased coverage of political parties with only the ruling party enjoying the coverage.

He said the action by the committee is based on a precedent which was set by the court in 1991 when the directors of the 3 institutions were put on suspension for failing to give equal coverage to all political parties in the run up to the general elections.

The court action comes after numerous calls by stakeholders for the public media to give equal coverage to all political parties and other stakeholders.

Stakeholders have argued that the 3 public media institutions are run using tax payers money hence should be accessible by all Zambians regardless of their political affiliation.

Veteran politician Vernon Mwanga has charged that the Zambia Centre for Inter-party Dialogue has become moribund and has questioned what the officials at the institution are doing.

Dr Mwanga said political parties in the country have not had any inter- party dialogue since 2001 when ZCID was established for the specific reason of promoting dialogue among political parties in the country.

He explained that the centre should be more active in bringing political parties together and ensure that they talk to each other as opposed to the current situation were parties are continually talking at each other.

He observed that political violence can be reduced by bring political players including those from the ruling party to a round table and agreeing on a number of things as leaders which can be implemented in all political parties.

The veteran politician is however hopeful that the centre will be activated in the nearest feature so that it can start hosting meetings and bring together both the opposition and the ruling party on a round table.

He said the centre was created to help broker peace and promote dialogue among political parties but that it has become inactive because the ruling party seems not to be interested in dialogue.

CCPC opens probe into vehicle towing business at scenes of accidents

FOLLOWING complaints that affected motorists do not realise value of their money, the Competition and Consumer Protection Commission (CCPC) has unveiled a market inquiry on towing of vehicles involved in accidents or breakdowns.

Several motorists have complained that privately-owned tow-vehicles usually appear at scenes of accidents or breakdown and immediately start towing the vehicles to the nearest police stations even without consent or agreeing on the fees to be paid by the affected people.

CCPC is since requesting for information from the public who are not satisfied with conditions of service rendered and the price charged by such firms.

“We are conducting a market inquiry in the towing sub-sector, this is in view of complaints received from consumers in the towing sub-sector that were not satisfied with conditions of the services, and did not realise the value of their money,” CCPC says.

“To understand the sector better and protect consumers of the towing service, CCPC is inviting members of the public around the country to submit their experiences,” the notice read in part.

It stated that CCPC is mandated to review the operations of the market in Zambia and the conditions of competition in those markets.

“CCPC is also mandated to protect consumers, to achieve this, the Commission undertakes market inquiries in order to understand and appreciate the operations of a sector of the economy,” it stated.

Two firms ordered to pay over K50 million in taxes to ZRA

THE Tax Appeals Tribunal has ordered Unified Chemicals Zambia and Armagrane Limited to pay re-assessed customs duty amounting to K40.5 million and K4 million, respectively, to the Zambia Revenue Authority (ZRA).

The Tax Appeals Tribunal, chaired by Fraser Chishimba, imposed the order on the two companies, which are importers of palm olein, a raw material used in their operations.

Between January 2009 and June 2013, the two companies imported raw materials and paid duty at the border but ZRA later informed them that the materials were wrongly classified to allow a lower import duty of five percent instead of 25 percent.

ZRA argued that imported palm olein is a finished product as it is fully fractioned and refined and cannot qualify as crude to be classified under the lower import duty rate.

The companies were also informed that the ZRA Commissioner General has authority to re-assess the duties deemed to have been incorrect.

But the companies appealed to the tribunal seeking relief that they paid duties at the time of importation and do not understand why ZRA came back demanding further duties when it released the goods after receiving payments from them.

The companies also argued that ZRA should not continue treating them as importers to this day when the goods have already entered Zambia and are no longer in their possession and have since long been consumed.

However, ZRA asked the tribunal to dismiss the notices of appeal for irregularity.
“If any tax-payer is dissatisfied with a classification of a product, he can only come to the tribunal upon meeting statutory conditions of the mandatory provisions of section three of the Tax Appeals Tribunal, which states that ‘where an importer of any goods is of the opinion that goods are incorrectly classified by ZRA, they should pay the amount demanded as duty or furnish security to the satisfaction of the Commissioner General for the payment of the amount’,” it stated.

In its ruling, the tribunal ordered the companies to either pay the duties assessed, or furnish security to the satisfaction of ZRA, failure to which the appeals will stand dismissed.

VICE-PRESIDENT Inonge Wina says Government has resettled over 4,000 miners who were laid off in the mining sector and provided them with land to engage in agriculture.

Speaking when she featured on the Sunday Interview on Zambia National Broadcasting Corporation (ZNBC) television, Mrs Wina said it is unfortunate that so many people lost jobs on the Copperbelt despite Government’s efforts to engage the mines early last year to minimise or prevent job losses.

And Mrs Wina condemned the political violence in the country over the recent past.
“The incidence of political violence has increased because those who are engaged in the act do not realise the damage they are putting on the country, especially in the area of attracting investors,” Mrs Wina said.

She said it is important for Zambians to realise that Zambia is known to be a peaceful country globally and that this reputation should be protected.

Mrs Wina said politicians who think that violence can help their political parties to grow are doing a disservice to the country.

And the Vice-President said Government is taking precautions to ensure that people do not starve as a result of the devastating drought that has hit most parts of the country.

“We have streamlined the distribution or sale of maize to millers. We have also expanded the agricultural sector in the northern parts of the country by encouraging farmers to plant crops like beans, cassava and other legumes that can survive,” Mrs Wina said.

She said Government is in the process of importing maize to cushion the grain deficit.
Mrs Wina said the national strategic reserves are still intact but the reserves will not last up to 2017.

She said Government is now looking at increasing agriculture production to include growing other crops like coffee, rice, cashew nuts and expanding other sectors such as animal husbandry.

The Vice-President said Government will buy up to over 2,000 solar-powered hammer mills which will be distributed throughout the country to help reduce the price of mealie-meal.

World Bank to finance Projects in Zambia worth US$800 million

THE World Bank says it will finance projects worth over US$800 million in Zambia’s agriculture, energy and water sectors.

World Bank senior operations officer Chrissie Kamwendo said about 15 projects will be financed in Zambia of which 26 percent support will go towards agriculture, 18 percent in water, 17 percent in energy and the rest will be directed to other various sectors.

Ms Kamwendo said this yesterday when she made a submission to the Parliamentary Committee on Economic Affairs, Energy and Labour chaired by Mazabuka Central member of Parliament (MP) Garry Nkombo.

“We have 15 projects and the total commitment is about US$864 million, and out of the US$864 million, US$648 million is yet to be disbursed. If we can improve on the disbursement process, it means we will have more money pumped into the Zambian economy,” she said.

Ms Kamwendo said the World Bank is committed to ensuring that key sectors are targeted in terms of finance to improve the living standards of Zambians and to improve the economy.

Ms Kamwendo said between July 2015 and June 2016, the World Bank was supposed to disburse over US$90 million, which is expected to be disbursed by the end of June this year.

And World Bank senior economist Gregory Smith said sustained growth in agriculture is key to reducing poverty among Zambians.

Mr Smith said the agriculture sector has not been performing well, as most farmers have not benefited from their farming activities despite Government putting in place programmes aimed at reducing poverty among the farming communities.

MMD condemns harassment of Pro Lungwangwa at NEC meeting

The MMD has apologized and condemned the harassment of Nalikwanda Parliamentarian Geoffrey Lungwangwa by some cadres who tried to block him from attending the NEC meeting.

Speaking when he featured on ZNBC’s National Watch Program on Sunday, MMD Spokesperson Raphael Nakacinda said the former ruling party was deeply saddened at Saturday’s events and that it condemns it with the contempt it deserves.

He said intra-party democracy is what determines how the party would conduct itself when it is voted into office hence the harassment of part members for having divergent views paints a very gloomy picture for the former ruling party.

He explained that it would be hypocritical of him to go on national television to condemn political violence without condemning the incident which occurred on Saturday during his party’s National Executive Committee meeting.

“It would be folly for me to be on national television to condemn political violence without first condemning what transpired yesterday when we had our National Executive Committee meeting were some cadres harassed Professor Geoffrey Lungwangwa.

“I would like to take this opportunity to publicly apologize to Pro Lungwangwa on behalf of the party and condemn the violent behavior of the cadres. What happened to him is unacceptable, barbaric and the party condemns the action of the cadres with the contempt it deserves,” he said.

He added that it was important for political players in the country to be civil whenever they had divergent views as resorting to violence said a lot about one’s intellectual capacity.

“As Political Parties when dealing with intra- party issues it is expected that we use superior logic to persuade one another at arriving at decisions because reducing ourselves to either vulgar language or violence only entails that someone has reached his limit in terms of their capacity to apply themselves on issue,” he said.

Professor Geoffrey Lungwangwa was allegedly harassed by some party cadres in full view of part president Nevers Mumba.

The cadres are said to have been paid by some senior leaders within the party to block Pro Lungwangwa from attending the NEC meeting because he was going to present a petition from Parliamentarians from the former ruling party who are calling for a a convention.

Catherine Phiri excited after WBC troumph

Catherine Phiri is still soaking her win in the wake of her WBC women’s bantamweight title victory.

Catherine beat Yazmin Rivas via a 7th round technical knockout after the latter suffered a cut on her following a but of heads.

“I am very happy and can not explain this excitement,” Catherine told Fightnews.com

“I have achieved what many boxers in the World have failed to do.

“I thank my coach, my manager and everyone who supported me.”

Catherine’s win came in her first return to the ring since May 2, 2015 when she suffered her debut professional defeat to relinquish her WBC interim title to Christina McMahon whose reign lasted just that fight before losing to Alicia Ashley of the USA in New York on October 29.

Her record is at 11 wins and one defeat.

Meanwhile, Catherine is expected to arrive back in Zambia on Tuesday an immediately after landing meet President Edgar Lungu at State House.

Katongo: We have exited CHAN with honour

Zambia captain Christopher Katongo says the team has exited with honour despite their quarterfinal elimination from the 2016 CAF African Nations Championship (CHAN) in Rwanda.

Chipolopolo lost 5-4 on post-match penalties after extra-time to Guinea on Sunday following a scoreless draw.

“I am not disappointed because when the coach assembled the players, we just knew each other for two weeks over the Christmas period,” Katongo said.

Katongo together with fellow 2012 Africa Cup winning star, the midfielder Isaac Chansa, were instrumental in Zambia’s progression to the quarterfinals scoring goal’s in Chipolopolo’s respective 1-0 victories over Zimbabwe and Uganda seeing George Lwandamina’s team advance with a game in hand from group D.

This is after the duo were drafted in at the 11th hour over Christmas following a year out of the Chipolopolo fold following a purge of veteran stars during the reign of Lwandamina’s predecessor Honour Janza.

“They were some players who were not part of the qualification but look at how far we have gone in the tournament,” Katongo added.

There are enough fuel stocks in the country-Government

Government has assured the nation that there are enough fuel stocks in the country.

Ministry of Energy and Water Development Permanent Secretary Emeldah Chola says national diesel stocks stand at 36 million liters, representing 16 days of national consumption.

Brigadier General Chola says the reserves also have 5.8 million litres of petrol to last five days of national consumption.

General Chola says this does not include stocks that the Oil Marketing companies have in their storage facilities.

She says 6 million litres of petrol is in transit from Dar-es- Salaam while 20 million litres are being loaded on urgent basis.

General Chola says the 26 million litres of petrol translate into 20 days of national consumption.

She has assured the nation that fuel is being imported as per normal schedule while INDENI Refinery is producing.

She also explained that the ship of contaminated crude feedstock that was rejected will be replaced by a new supplier that the government has engaged.

Gen Chola said the replacement is expected in the third week of February, 2016.

She has since appealed to all fuel consumers to go about their normal business without anxiety or panic as the country has enough fuel.

Police in Kitwe have quelled a riotous protest by Copperbelt University-CBU students who went on rampage this afternoon to press for payment of their meal allowances.

And calm has returned to the Jambo Drive Campus as police in riot gear continue to keep vigil over unfolding events.

A ZNBC News crew that found the road leading into the campus blocked with logs and stones.

And Copperbelt Province Police Chief Charity Katanga disclosed that over 17 students were apprehended during the fracas.

Ms. Katanga said those picked up have been charged with riotous behaviour and malicious damage to property.

She said the 17, who include two female students are detained at Riverside Police Station.

Nine suspected poachers nabbed in Monze District

The Department of National Parks and Wildlife Services in Monze District over the weekend and this morning arrested nine suspects who were found in possession of 160 Kilogrammes of Dried Zebra Meat and a live protected Pangolin.

And the Department says rehabilitation works on the Lochnivar Lodge is are nearing completion following the release of more than K500,000 by government towards the refurbishment of the structure and other tourism facilities in the National Park.

Monze District Area Warden Wilfred Moonga said out of the suspects, six were arrested on Saturday around 16 : 00 hours while the rest were arrested this morning around 09: 00 hours.

Mr. Moonga who confirmed the arrests to ZANIS today said the six suspects who included a police officer were found in possession of a live Pangolin without legal documents contrary to the Wildlife Act N0. 14 of 2015 of the laws of Zambia.

The six suspects who are all males were apprehended around 16 hours on Saturday after a tip of from members of public as they tried to sale the Pangolin at K80,000 in Monze’s Manungu compound, he said.

Suspects arrested included Patrick Mulenga aged 34 of Petauke compound in Petauke District, Cephas Zulu aged 58 of Kalindawalo chiefdom in Petauke District, Peter Phiri aged 38 of Kabasa Chiefdom in Katete District , Munyangano Musoke aged 36 of Naluwama chiefdom in Mazabuka District.

Also included are Peter Nthani aged 36 and Charles Mbawo aged 56 of Garden Compound and Chelston in Lusaka, respectively.

“ I can confirm that we arrested 9 suspects in total out of these, six were found in possession of a live Pangolin and three have been arrested today after they were found in possession dried meat,” said Mr. Moonga.

Mr. Moonga said the Department believes the suspects poached the live Pangolin from one of the Districts in East Province and were trying to sale it to unsuspecting members of public in Monze District.

The area warden said the rescued Pangolin has since been released in Lochnivar National Park adding that the Department has since seized a Toyota Hilux Surf registration Number ARB 1330 belonging to one of the suspected alleged to have been used to traffic the live protected animal.

And Mr. Moonga said three suspected poachers were arrested after they were found in unlawful possession of 160 kilogrammes of dried Zebra meat concealed in a large plastic bag without a legal documents.

He identified the suspects as Mweemba Machelo female aged 38, Christine Mweemba female aged 30, and a male Mayambu Chiyoba aged 23 all of Chief Hamusonde’a area in Monze District.

“This Morning around 9 hours near Harry Mwaanga Nkumbula Stadium, we arrested three suspects , two females and a male who were found in possession of 160 kilogrammes of dried Zebra Meat government trophy which they concealed in large plastic bag popularly known as, “ Ukwa bag” as they were trying to hike en-route to Lusaka ostensibly to sale the meat,” said Mr, Moonga.

The Department has for this reason heightened patrols in the Lochnivar National Park and spot checks in the District to prevent poaching and prevent trafficking of government trophy by poachers, he said.

He, however said the Department needs more manpower and resources to adequately conduct patrols and intensify nights patrols in the Park.

“I would say we seem to have rampant poaching especially during this time of the year when some people are facing hunger and also because of the proximity of Lochnivar to Lusaka where there is a seemingly a ready market for bush meat,” Mr. Moonga said.

He added that the, “Department needs more resources and manpower to curb any poaching activities.”

Meanwhile, Mr. Moonga said the completion of rehabilitation works on the Lochnivar Lodge would help to spar tourism arrivals to the National Park renowned for its unrivalled Lechwe and bird population.

He said so far government has released more than K500,000 for rehabilitation works on the lodge and other tourism sites adding that the major rehabilitations works on the tourism facilities in the park would significantly revive tourism in the District and subsequently tourist arrivals in the National park.
